Strong in both industrial and education, he has almost 20 years of experience working in reputable entities such as The Peninsular Hong Kong, Mandarin Oriental Hong Kong, Hullet House, Galaxy Macau and Broadway Macau. He was a proud pre-opening team member of Broadway Macao and Hullet House (HK), actively participated in the Mandarin Oriental Hong Kong re-opening project and had involved in numerous openings of Galaxy entertainment group’s restaurants. In Broadway, he took up a cross functional overlooking the customer journey, events & promotion and F&B operation for 30+ F&B outlets with 400+ team members.
He had also contributed to the talent nurturing for the industry. Being a Certified Hospitality Educator (AH&LEI), Certified Sommelier (CMS), Educator of Wine and Spirit Trust and lecturer in City University of Macau (contracted), he taught courses such as customer service, F&B service, wine training, sales and marketing and bachelor courses in hospitality. The background of his students range from hospitality staff, bachelor students, diploma students to working adults. Dated back from 2013 to 2018, he was also the sole WSET educator for Galaxy Entertainment Group for its 8 hotels (at that time) enhancing the wine and service knowledge across F&B team members.

Educator and entrepreneur has been in different tertiary institutes with diversified experience in F&B and FMCG industry in London, Manchester, Hong Kong and Jakarta.
With 30 years of experience in F&B, Maria has 22 years of management experience in F&B including financial goals, operations, administration and training. She has worked in multi-cultural backgrounds in reputable brands and mega resort including Wynn Macau, Galaxy Entertainment Group, The St. Regis Macau, the Ritz-Carlton Hong Kong and Grand Hyatt Hong Kong. Her expertise covers a variety of F&B areas including fine dining, bar & lounge, buffet and VIP services.
With this vast F&B experience, she overlooked 6 restaurants when she was in Galaxy Entertainment Group Macau (including a Portguese Restaurant, two casual dinings, one bar, one lobby lounge, and one bakery). She had also two pre-opening experience where she opened the Lounge & bar in Ritz-Carlton Hong Kong and Passion in Galaxy Macau, proofing her management skills in start up projects, conceptual developments and service standards alignments.
With 30 years of experience, Chris had extensive knowledge in fine-dining, service and Forbes standards. He worked in Michelin Restaurant in Hong Kong hotels including the two-starred-Michelin resturant Pierre in Mandarin Oriental hotel (Hong Kong) and the one-starred-Michelin Gaddi's in the Pennisular Hotel (Hong Kong).
With 35 years of experience working in international hotel and resorts, he worked in reputable hotels including Galaxy Entertainment Group (Macau), Sentosa (Singapore), M.Y Golden Shadow (Cruise), Raffles (Sinagpore), New Park Hotel (Singapore) and Royal Hotel (Singapore).
His experience ranged from overlooking stewarding in operation service in cruise to managing a vast variety of outlets including fine-dining (western), cafe, lounge and casino F&B outlets. With this diversed F&B background and knowledge, he held a mangerial position in F&B project development when he was in Galaxy Entertainment Group, where as this department takes the lead of self-operated F&B new outlet's conceptual development and design, and the selection of F&B tenants within the group. He is also familiar with the Forbes standards as all hotels he worked in was graded by Forbes.
With 20 years of experience, Alison had two pre-opening experience where she joined as pioneering member including the re-vamping project of Broadway Macau in 2015 and the historical hotel Hullet House 1881 Hong Kong in 2013.
She led the F&B training team of all the outlets in Broadway Macau after its opening, including operational & beverage trainings, competitions and service quality programs.
Chen has been working in the service and education industry for over 15 years. In this 15 years of time, she has worked in several pre-opening projects in the Cotai Stip.
She is strong in service excellence project especially in hotels and F&B industry, using mystery shopping tools and service audits that put service and standards to the next level.
She has a passion in coffee, whisky and travelling.
